Rice with mushrooms




Rice with mushrooms

 Mushrooms are used in traditional Chinese medicine for 2000 years due to their great   nutritional value in carbohydrates and proteins. These proteins provide all the basic amino acids to our body and they are as good as animal proteins. Mushrooms are a good source of A, B,D,P vitamins and minerals such as Copper and Potassium. Mushrooms are low in calories, fat-free, cholesterol- free , hence  they are ideal food for those who are on a diet.

Ingredients:
  • 2 glasses of rice.
  • 1 glass of sliced fresh mushrooms.
  • 2 tablespoons butter.
  • 1 tablespoon olive oil
  • Salt
  • Hot water
  • 1 bouillon cube
Preparation:
Brew the rice in warm water for at least thirty minutes. In a large nonstick skillet put olive oil and sauté the mushrooms, add the rice, the salt and the bouillon cube. Pour hot a little water into the mixture and bring it to boil. Season it with salt and pepper, cover it, reduce heat   and simmer until all the water is absorbed.
 



Yogurt Pie



Ingredients:

  • 3 eggs.
  • 3 cups of coffee sugar.
  • 3 cups of coffee yogurt.
  • 1 cup of coffee corn oil.
  • 10 gr baking powder.
  • 1 packet vanilla (10 gr)
  • 8 cups of coffee flour.
  • Zest of half a lemon.

For the syrup:

  • 3 glasses of sugar.
  • 3glasses of water.
  • 1slice of a lemon.

Preparation:

In a large mixing bowl, whisk together the eggs and sugar first until they become a cream. Add the yogurt and the oil and continue whisking. Afterwards, add the flour slowly, the baking powder and the vanilla. Remember that the more you whisk the better your “yogurt pie” will turn out. Pour the batter into a greased   baking tray and bake in preheated oven at 190° C until the top is nicely browned and a toothpick inserted in the center comes out clean. Once you remove the pan from the oven, let it rest for about ten minutes until it gets cold enough to pour   the syrup.
 Prepare the syrup by mixing the sugar, the slice of the lemon and water in a medium saucepan. Turn the heat on high and bring the mixture to a boil while continuously stirring it. When it starts boiling let it in medium heat for another five minutes. Turn off the heat and let the syrup cool down for 3 – 4 minutes. Using a large spoon, slowly drizzle the cool syrup all over the cake and let it soak in.


Loxandra’s meat pie

Ingredients :

For the crust :

200 gr yogurt
200 gr butter or 200 ml corn oil.
Flour as much as needed  so as the dough is not sticky and can be kneaded  easily.
1 teaspoonful of salt.
1 beaten egg yolk for basting the cover filo.
(phyllo pastry)

For the filling :

500 gr minced meat
700 gr onions.
3 eggs.
3 spoonful of cream.
250 gr parmesan cheese or kefalotiri
 A little spice
Little cinnamon.
Black pepper, salt.
1 spoonful toast.
2 spoonful butter.
Little sugar.
 

Preparation:

Creamy mushroom soup



 

Ingredients :

350 gr mushrooms.
2 tbsp flour.
1 glass of milk.
3or 4 glass of chicken broth or water.
1/2 bundle of dill .
1 medium onion finely chopped.
1 tbsp butter or margarine.
Salt, black pepper, red pepper.


Directions :

Saute the onion with butter and add the mushrooms. Cook until all the water from the mushrooms is absorbed, add the flour and stir twice. Pour the milk and the water and cook without covering the kettle with the lid until the soup is thick and creamy. In a small pan melt butter then add black pepper, red pepper and salt and pour the mixture over the soup. Sprinkle with dill.
